Capers are the unopened green flower buds of the Capparis Spinosa, a wild and cultivated bush grown mainly in Mediterranean countries. Capers can add piquancy to many sauces and condiments (butter sauces, tomato-based sauces); they can also be used as a garnish for meat, seafood and vegetable dishes. The plant grows in arid land and reflects the typical characteristics of the Mediterranean fauna. Its roots go deep into the soil and provide the necessary water and nutrition to the plant..

 
Capers can range in size from that of a tiny peppercorn (considered the finest) to some as large as the tip of the little finger. In the production process, the first step is the collection of different sized buds. Manual labor is required to harvest capers. In the next stage, these buds are passed through sizing meshes. Sizing of capers is significantly important for SIBAS; that's why, the principle of separately keeping different sizes of capers has been ensured by SIBAS since the company's first day of operation. After calibrating the capers according to their sizes, they are pickled in brine or they are salted. Finally, the capers are packed in different types of industrial, foodservice or retail packages according to the specific requirements of our customers.
